Bar-B-Que Chicken with sweet soy sauce (Ayam Bakar Kecap) recipe

This recipe is one of probably 10 different variant of recipes I know for sweet soy sauce, barbecued chicken, Indonesian style (ayam bakar kecap).  My mom has her own, my mother in law has her specialty too, every street vendor has their own unique style. This recipe is my own.  This recipe is probably more elaborate than any out there that I know.  What I’ve done was to mix and match all recipes I had learn and come up with one that my family and I enjoy best. I’m sharing this recipe in hope some of you would fall in love with it too 😉

Sautéed onion, garlic and tomatillos in oil until soft. Add chopped cilantro, bell pepper, juices and spices. Simmer for about 10 minutes while stirring. Set aside and allow to cool. Place chickens in a large container or large resealable bags. Cover with sauce and refrigerate for 3 to 4 hours. Preheat grill. Remove chicken halves from marinade and place on medium hot grill. Grill for about 30 minutes turning occasionally and basting with reserved sauce every 10 minutes. Do not baste in the last 10 minutes of grilling.

Mexican/Spanish Rice Recipe

I received this recipe from my daughter’s best friend.  This is an authentic home made recipe. Here it is:

Ingredients:

  • 1 cup of rice (1 cup = 1 coffee mug)
  • 2 cups water or better, chicken broth
  • 1 tbspn chicken powder (or buillon)
  • 1/2 can of tomato sauce
  • olive oil

Cooking method:

  • heat pan with olive oil
  • fry the rice until golden brown (you can add onion and/or garlic before putting the rice in)
  • turn off stove & add tomato sauce, water & chicken powder … mix them well
  • turn stove on, bring water to a boil (cover with lid)
  • keep boiling (5-10 mins) until you can’t see the water anymore
  • turn off stove but keep the lid on for about 10-15 minutes
  • serve!

Tip: once the rice is fully cooked, immediately mix in some butter to add buttery taste and the shiny look.

Beef scrambled eggs & Shrimp worcestershire sauce

Today is the last day of fasting and I thought I would cook some ‘chinese’ dishes.  When I looked for materials in the freezer, I found some large tiger shrimps and beef tenderloin.  So I thought I’d cook the meat as ‘beef with scrambled eggs’ and make the shrimp into ‘shrimp in butterred worcestershire sauce’.

Here’s what I did to create those dishes.  As usual, measurements are not included because when I cook, I don’t measure.

Beef with scrambled eggs:

10949
  1. slice meat (beef tenderloin), not too thin
  2. marinate (10 min) in a mix of: sesame oil, soy sauce, rice cooking wine, oyster sauce and a bit of cornstach
  3. stir fry the marinated beef in a high heat until beef turns brown, then set the beef aside
  4. stir fry thinly sliced onions until they change color, then add in some oyster sauce
  5. put the beef in, immediately followed by chopped green onions and beaten eggs
  6. turn heat down, turn the mixture often and wait till eggs are just done

Shrimp in butter and worcestershire sauce:

  1. marinate shrimp in a mix of lemon juice and salt
  2. fry the shrimp in high heat until they turn red, set aside
  3. add butter and peanut oil into the frying pan
  4. add a couple crushed fresh garlic
  5. after about 30 seconds, add a mixture of cooking rice wine, worcestershire sauce, fish sauce, white pepper
  6. wait a few seconds until mixture is boiled then add the shrimp back into the pan and mix thouroughly
  7. serve with garnish of cucumber, tomato and lettuce.  you can also add slices of bell pepper and chopped green onions
