Bar-B-Que Chicken with sweet soy sauce (Ayam Bakar Kecap) recipe

This recipe is one of probably 10 different variant of recipes I know for sweet soy sauce, barbecued chicken, Indonesian style (ayam bakar kecap).  My mom has her own, my mother in law has her specialty too, every street vendor has their own unique style. This recipe is my own.  This recipe is probably more elaborate than any out there that I know.  What I’ve done was to mix and match all recipes I had learn and come up with one that my family and I enjoy best. I’m sharing this recipe in hope some of you would fall in love with it too 😉

This recipe is for approximately a whole chicken. Also please note, I have adjusted the ingredients to those handily available in the USA, which are essentially those in dried/powdered form. It is obviously better if you can substitute them with the real (fresh) materials.  First, prepare the chicken marinade:

  • dried chili flakes
  • 2 cloves garlic
  • 4 shallots (bawang merah)
  • 1 tea spoon galangal powder (langkuas)
  • 3 table spoon candle nuts powder (kemiri)
  • 1 tea spoon turmeric powder (kunyit)
  • 4 dried basil leave (laos)
  • 1/2 cup sweet soy sauce (kecap manis)
  • 2 table spoon kaffir lime juice (jeruk purut), or otherwise, 4 kaffir lime leaves
  • salt and pepper to season

Using a ‘cobek’ (see picture: http://commons.wikimedia.org/wiki/File:Cobek_ulekan.jpg), grind all the ingredients until they form a smooth paste.  If you prefer, you can use your food processor or chopper to achieve the same … I just like doing it the traditional way better 😉

If you have a whole chicken, cut the it in half.  Put the chicken in a large wok and rub the marinade onto the chicken.  Let the chicken be marinated for about an hour.  At the end, add between a quarter to a half cup of water into the wok and heat the wok. Ensure that you turn the chicken over a few times to prevent burning.  Once the liquid thicken a bit, turn off the heat and grill the chicken for about 15-20 minutes, turning them over half way through.  Enjoy!

      I did it myself. I didn’t start from scratch, used wordpress theme called ‘Unsleepable’ as a base then added my own adjustments and additions.
